The Bikini Cocktail
Serves 10 guests
To make the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Put the listed items in a saucepan, heat until it reaches a simmer, mixing so the sugar melts. Next, turn off the stove and leave to cool entirely. Transfer to a sealable bottle, seal and store chilled, it will last for around four weeks.
To make Batch Mix: Combine every spirits and syrup into a sizeable container, let it rest for one hour, then strain preferably using a fine cloth, so it's completely strained.
To serve: Pour 85ml of the batch mix into your mixing glass filled with ice, and stir gently for one minute until cold. Pour into a chilled martini glass or similar, garnish with some cranberries and complete it by giving it a light spray with the mandarin essence above the glass.
